I only decided it was going to be called that about 2 hours ago when Michael said “you know you kind of made a vegan condensed milk’… about my caramel sauce…but vegan condensed milk works too… now that you know my extremely creative and out of the box ways that I get my blog post titles… lets get to it!

First up the condensed milk

  • 1 can of organic coconut milk (500ml)
  • 3/4 cup of honey

(I made double of this to create all three recipes with some still leftover but Im sure one serving will be enough if you’re making one or two of the recipes below)

bring to boil and simmer for like 5 minutes

then keep in the fridge.

Healthier STICKY TOFFEE PUDDING(as seen on instagram, @jordyns_channel )

gluten free, refined sugar free, paleo, dairy free

Ingredients 

  • 2 mashed bananas
  • 4 eggs
  • 2 tbsp honey
  • 2 grated zucchini (once grated place in a clean dish towel to remove any excess water, this is NB)
  • 1 and 1/4 cup of any gluten free flour. I’ve personally used almond flour (works the best) or chickpea flour which was surprisingly also quite yummy (and a fraction of the price)
  • 2 tsp baking powder
  • 2 tbsp dark chocolate chips or cacao nibs
  • 1 heaped tbsp of cacao
  • 1/4 cup of the vegan condensed milk

What to do

  • mix up everything… in no specific order really but generally beating the eggs first and then adding everything else works the best
  • I cooked this in small little soup bowls but let me just say it makes a really big portion size so feel free to share or store some away. if you want smaller portions for more people then just use littler bowls or if you just want one gigantic pudding add it to a cake tin
  • before you add the mixture to the bowl add 1/4 cup VC (vegan condensed milk) to the bottom, then poor half the mixture in and add another 1/4 cup of VC then add in the rest of the mixture and poor a little bit of VC over the top so it can become caramelized and toffee like
  • bake for about 40 minutes on medium- high heat (but keep an eyer on it and take it out as soon as its cooked through)
  • I added pecans, bananas, coconut ice cream and cinnamon to mine and it was gone in a flash

When I was in school my friend use to make these amazing no bake cookies with cacao, lots of butter and sugar. i loved them so much that i still wanted to indulge in them without the too many cups of sugar and butter…

NO BAKE CHOCOLATE OAT COOKIES 

Ingredients 

  • 1 cup VC
  • 2 cups gluten free oats or normal oats
  • 1tbsp cacoa
  • 1 tbsp of coconut oil
  • extra things i added to make them snazzier(these aren’t necessary) ; chia seeds, bee pollen granules, you could add protein. add adaptogens like Maca

What to do

  • bring to boil the VC and the oats
  • add the coconut oil
  • add the cacao powder
  • Add everything else. Don’t over cook the oats… I like them when they are still crunchy
  • then place into a dish a place in the freezer for a good couple of hours. once done- cut into bars and enjoy!

Or use them to make ice cream sandwiches- honestly the dream

PUMPKIN PANCAKES

these are quite difficult to make or maybe its just me… but they are really delicious especially topped with ZUCCHINI GRATES (which are my new AMAZING invention)

Ingredients

  • 4 tbsp VC
  • 4 eggs
  • 3/4 cup of pumpkin pure
  • 2 tsp baking powder
  • 1 and 1/2 cup of flour (I used cassava flour but I’m sure any substitute will work)

What to do

  • mix it all up and fry like normal pancakes
  • i added coconut ice cream and zucchini grates

ZUCCHINI GRATES

Grate 1 or 2 zucchinis and fry in an excess (so they float) either coconut oil or ghee/butter until golden and crispy and then place on a paper towel once done so the excess oil slips off. add sea salt and nearly eat all of them whilst your pancakes are cook (as long as you have a few for the toppings…) this also works really well if you just peel a zucchini or cut it quite thin and fry it… it tastes amazing!
