Sorry I haven’t posted in quite a while, I’ve been so busy by I’m back with a bang 💥 I honestly have tried to make these 4 times and finally I got them right. Let me not blabber on for too long and just get on with it.

Ingredients (WAFFLE)

(makes 5)

  • 2 eggs
  • 1/2 cup almond milk/ coconut milk
  • 2 tsp baking powder
  • 1 tsp flax oil or just sub an extra tsp of coconut oil
  • 2 tbsp coconut oil
  • 3/4 cup almond flour
  • 1 tbsp coconut flour or almond flour (I used coconut)
  • 2 tsp vegan protein powder/collagen powder (optional, you can just leave it out and add 2 tsp of more almond flour)
  • 1/4 cup any nut butter (I used sugar free, salt free from Woolworths)
  • 3 tbsp honey
  • Pinch of pink salt

(You could also use this as a pancake mixture)

What to do:

Beat the eggs and then add everything else

Different flavors?

1. Chocolate

Just add 1tsp of cacao

2. Activated charcoal

(It tastes nothing like charcoal) just add 1 and 1/2 tsp charcoal powder

3. Matcha

Add 1-2 tsp matcha powder

4. Vanilla

Keep to the basic recipe and just add vanilla powder/essence/paste

Salted Caramel sauce

-1/4 cup nut butter of choice

-1/3 cup honey

(Heat the honey in the microwave and then add the nut butter)

– a pinch or two of pink salt

Ice cream

– blend 2 avos with 1/4 cup honey and 1/4 cup coconut milk. Then mix in blueberries, pistachio nuts and chopped figs. Then freeze but not till it’s very hard. It must still be soft. It’s quite an interesting taste…

– blend 3 bananas with 1 tbsp peanut butter, 1 tsp cinnamon and then freeze that till it’s semi frozen and use that as an ice cream

Raspberry purée

handful of fresh or frozen raspberries (I used frozen)

– 2 tbsp honey

– bring to boil and mix, once it’s all blended then remove from heat and pour over waffles.

(This stuff is so delicious; on top of smoothies/pancakes/waffles/ice cream/ plain yoghurt/ coconut yoghurt, ANYTHING)

I topped mine with some coconut ice cream, the salted caramel sauce, dark choc chips, chopped figs, pecans, pistachio nuts, raspberry purée and the Avo ice cream.
