Healthier choc chip cookies

– 115 grams vegan butter (margarine) // normal butter

– 1/2 cup buckwheat flour

– 1 1/3 cup spelt flour

– 1 flax egg ( 1 tbsp of flax with 3 tbsp of water)

-1/2 cup coconut sugar

– 1 tsp vanilla essence

– 1 tsp baking powder

– a pinch of pink salt

– choc chips ( I used half a bar of vegan chocolate, you can use any chocolate)

– 1 tbsp almond butter

What to do

in a cup, make the flax egg (mix 1 tbsp flax with 3 tbsp water)

mix the margarine & coconut sugar together

– add the flax egg, almond butter, vanilla and salt

– add half the flour, the baking powder. Mix with a spoon, not an electric mixer

– add the rest of the flour

-add the chocolate chips

– preheat the oven to 180 degrees Celsius

– with your hands- roll the dough into a fat sausage and wrap it in cling wrap or tin foil. Place it in the freezer for 20 minutes

– take out of the freezer, remove the cling wrap and cut the dough into little disks. Place on baking paper and cook for 10 minutes

– they will look soft when they come out but they harden when they cool.
