Banana pancakes, quick & healthy!


– 2 egg whites

– 2 eggs

– 60grams protein powder of choice. I used the muscle wellness vegan protein. Plain flavor.

– 1/2 cup almond milk (can use normal milk)

– 1 cup gluten free rolled oats

– 1/4 tsp baking soda

– 1 tsp baking powder

– 1 banana


It’s so easy and quick. Pop everything into a blender and blend for about 60-90 seconds. Until the mixture is smooth. And then fry them like normal pancakes.


My favorite topping on pancakes is cinnamon sugar with fresh lemon juice, so I mixed some cinnamon with coconut sugar & a little bit of cacao powder and sprinkled that over the top & then squeezed over some lemon juice. Because the pancakes where so beautiful and subtle just by themselves I didn’t want to over power them with all the usual toppings. I did however just add a couple on the side, coconut flakes, fresh berries, choc, Pb.
