Salted banana & Zucchini loaf

The texture of the loaf was amazing, I was surprised how much it rose as well. this loaf is gluten free, dairy free and refined sugar free. It can easily be made nut free. It does contain protein powder but I will include the substitute to make it without protein powder.

Dry Ingredients:

  • 140 grams almond flour of coconut flour
  • 60 grams protein powder (or just add 60 more grams of almond flour or coconut flour) I used unsweetened chocolate protein powder
  • 1 tbsp psyllium husks
  • 1 and 1/2 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1 tsp maca powder (optional)
  • 2 tbsp stevia/honey or I used coconut sugar
  • 2 tsp chia seeds
  • 50 grams (about 1/2 cup) ground flax seed
  • 1/4-1/2 tsp ground pink salt and 2-3 pinches to sprinkle on top

Wet Ingredients:

  • 3 eggs
  • 3 finely grated zucchinis
  • 3 mashed bananas ad one extra (optional) to decorate the top
  • 1/4 cup milk of choice, I used almond milk
  • 1 tbsp of nut butter (optional)
  • 2 tbsp melted coconut oil

what to do:

  • preheat the oven to 180 degrees Celsius
  • Mix all the dry ingredients
  • In a blended or by hand blend all the wet ingredients except the zucchini
  • fine grate the zucchini and squeeze out the liquid either in a dish towel or just with your hands over the sink
  • mix the wet and dry ingredients together and then fold in the zucchini
  • *optional, you could also add cooked bacon bits or dark chocolate chips
  • pour into a non stick loaf tin
  • *optional, place a banana on top, sprinkle over some pink salt and coconut sugar
  • bake for 40-50 minutes
  • enjoy with butter or honey, or whatever you wish.
