This loaf is gluten free, refined sugar free and vegan. It is delicious. I couldn’t believe how well it turned out. I hope you enjoy!

  1. Preheat the oven to 170*c
  2. Line a loaf tin with baking paper or non stick spray
  3. in a blender lightly pulse the bananas and dates or you can mash the bananas and finely chop the dates
  4. Make the flax egg in a separate cup and leave for a while
  5. Add the coconut milk, oil, coconut sugar, flax egg, salt and tahini. Mix well with a fork or whisk
  6. In a separate bowl combine the baking powder, soda, cinnamon, oats and gluten free flour and mix.
  7. add the flour mixture to the wet mixture and mix with a fork until its all well combined
  8. pour into a loaf tin and bake for around 60 mins. I check mine at 50 minutes and it was done. If a knife comes out clean then its done. It may still be a bit soft when it comes out but wait for it to cool before cutting it.

I also added half a banana on top as seen in the photo, I cut it quite thin and layered it on top, if you do that you'll need 5 bananas in total xx
